For many years I was quite hesitant to visit restaurants because in those days my idea of the business model of a restaurant was different. I used to observe that when we go to a restaurant many customers don’t finish a dish completely, they waste a lot of food.
My conviction was that leftovers will be taken back to the kitchen, mixed, and redistributed as a new plate to customers. This is what I believed for many years when I was young. But on a bus journey during my college days, I happened to meet a person whose business was running multiple restaurants. It was a 5 hour journey, we became very friendly, and after some time I shared my concern with him. I told him about my conviction and asked him how exactly restaurants made money.
He told me that whenever a plate of food is served to you, whether you eat it completely or not, it generates the profit the seller or the restaurant owner needs, so they don’t have to mix your leftovers with the food back to run the restaurant.
This may look silly to many of you but for me it opened my mind, and blew me away. Then only did I get a different perspective about the business models of restaurants and I lost almost all the hesitation I had to eat at a restaurant.
I happened to think about this gentleman after many years today this evening and I thought I should extend my gratitude to the person who helped me understand my ignorance regarding the business models of restaurants.
